Why these cookies don’t have refined sugar

Why we use coconut sugar in this recipe

We used coconut sugar because it’s healthier than normal sugar. It’s my personal favorite for baking with. It doesn’t affect the glycemic index in the same way that refined sugars do. That being said – sugars in general aren’t healthy no matter if they’re healthy alternatives. Please try to be mindful of the quantity of these delicious cookies that you eat.

One common theory is that snickerdoodles have German origins. The name “snickerdoodle” is thought to be of German descent, possibly stemming from the German word “Schneckennudeln,”. It refers to a type of sweet cinnamon pastry. German immigrants could have brought a version of these treats to the United States, which later evolved into the snickerdoodle we know today.

Are they gluten free snickerdoodle cookies?

Yes! They are both vegan and gluten free (and still amazingly delicious!) It was important to me when I wrote the recipe that it fit a variety of health goals, as well as our core mission of being as natural as possible.

Ingredients
  

  • Almond or Oat Flour – 2 cups
  • Coconut Sugar or preferred sugar substitute – 1/2 cup
  • Baking Powder – 1 teaspoon
  • Unsalted Vegan Butter
  • Vanilla Extract – 1 teaspoon
  • Ground Cinnamon – 1 tablespoon
  • A Pinch of Salt

Instructions
 

  • Preheat Your Oven: Begin by preheating your oven to 350°F (175°C) to ensure it’s ready when your cookie dough is.
  • Mix Dry Ingredients: In a mixing bowl, combine the flour, coconut sugar, baking powder, ground cinnamon, and a pinch of salt. Mix these dry ingredients thoroughly to distribute the flavors evenly.
  • Incorporate Wet Ingredients: Add the softened unsalted butter and vanilla extract to the dry mixture. Using a hand mixer or a sturdy spatula, blend the ingredients until a cohesive dough forms. The dough should be slightly sticky but manageable.
  • Chill the Dough: To make the dough easier to work with, cover it and refrigerate for about 15-20 minutes. Chilling the dough also enhances the flavors and textures of the cookies.
  • Shape the Cookies: Once the dough has chilled, take small portions and roll them into balls. Place the balls on a baking sheet lined with parchment paper. Make sure to leave some space between each ball, as they will spread slightly during baking.
  • Prepare Cinnamon Coating: In a small bowl, combine a teaspoon of ground cinnamon with a tablespoon of coconut sugar. This mixture will be used to coat the cookies, providing that signature Snickerdoodle flavor.
  • Coat the Cookies: Gently roll each cookie dough ball in the cinnamon coating mixture until they are well-covered. The coating will add a delightful crunch and aromatic flavor to the cookies.
