Why You’ll Love Lemon Pizza

Lemon pizza is deliciously different. The acidity of the lemon cuts through the richness of the cheese and other toppings, providing a balanced and flavorful bite. It’s similar to how pineapple is on pizza! A bit of freshness and acidity to balance things out. It’s a light and refreshing option that’s perfect for warm weather, but it’s also versatile enough to be enjoyed year-round. Plus, it’s easy to make and can be customized to suit your taste.

Tips for Perfect Lemon Pizza

  1. Thin Lemon Slices: Make sure your lemon slices are very thin to avoid bitterness and ensure they cook properly.
  2. Balance Flavors: If you find the lemon flavor too intense, try using lemon zest instead of whole slices.
  3. Fresh Herbs: Fresh thyme and basil add a ton of flavor and aroma. Don’t skip them! Basil is one of the easiest things to grow even on small apartment balconies too. Try growing it yourself!

Ingredients

For the Dough

  • 2 1/4 teaspoons active dry yeast 1 packet
  • 1 1/2 cups warm water 110°F
  • 3 1/2 to 4 cups all-purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 1 teaspoon salt

For the Toppings

  • 1 large lemon thinly sliced
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup ricotta cheese
  • 2 cloves garlic minced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh basil chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

Prepare the Dough

  • In a small bowl, combine the warm water and sugar, then sprinkle the yeast on top. Let it sit for about 5-10 minutes, until it becomes frothy.
  • In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  • Turn the dough out onto a floured surface and knead for about 8-10 minutes, until it’s smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.

Prepare the Toppings

  • Thinly slice the lemon, removing any seeds. You want the slices to be almost translucent.
  • In a small bowl, mix the ricotta cheese with the minced garlic, salt, and pepper.

Assemble the Pizza

  • Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up.
  • Divide the dough into two equal portions (for two pizzas) or keep it whole (for one large pizza). Roll out the dough on a floured surface to your desired thickness.
  • Transfer the rolled-out dough to a pizza peel or baking sheet. Brush the dough with olive oil. Spread the ricotta mixture evenly over the dough, then sprinkle with shredded mozzarella and grated Parmesan. Arrange the lemon slices on top, then scatter the fresh thyme and basil over the pizza.

Bake the Pizza

  • Transfer the pizza to the oven (onto the pizza stone if using) and bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
  • Remove the pizza from the oven and let it cool for a few minutes. Drizzle with a bit more olive oil if desired, slice, and serve immediately.
